Brewers' spent grain can be an attractive source of protein in human nutrition
Tuesday 1 December 2020
BioBoost partner Vives analysed brewers spent grain (BSG) and concluded that it can be an attractive constituent of human nutrition. Typical applications includes breads, mixed grain cereals, cakes, muffins, cookies, tortillas, snacks, doughnuts, and brownies. BSG incorporation can enhance the fiber and protein content of the developed baked products. Analyses were done on dried and pulverised BSG of various sources with high-performance liquid chromatography (HPLC).
